Spinach and Cheddar “Frittata”

Hi, my name is Lauren, and I’m a breakfast-aholic. I’m always looking for new and fun ways to make breakfast so I can eat it at any time throughout the day. For me, this happens best when the meal isn’t sweet (although pancakes for dinner is an all-time favorite). I discovered a recipe for this Spinach and Cheddar Frittata, and decided to make it “single-friendly” and almost in quiche form. They were delicious.

Ingredients

4 large eggs

2 large egg whites

1 cup spinach, fresh, baby leaves, chopped

2 tablespoons scallions, finely chopped

1/4 teaspoon table salt

1/4 teaspoon black pepper

1 sprays cooking spray

1/2 cup shredded fat-free cheddar cheese

Cooking Instructions

Preheat oven to 400F. In a small saucepan, add some cooking spray (or butter if you’re feeling adventurous) and lightly saute the scallion just to soften them up. While the oven is preheating, beat together the eggs, egg whites and stir in the spinach, scallion, cheese salt and pepper. Coat a muffin pan (or a 6x8 baking pan) with cooking spray. Pour the mixture into the muffin pan, filling it an inch or so from the top to allow the mixture to rise as it cooks. Place in the oven and let cook for 10-15 minutes. Use a fork to test and make sure egg is cooked all the way through (no residue left on the fork). Let cool and devour.
