Bubbie’s Chocolate Chip Oatmeal Cake
I recently attended a small dinner party where I was asked to bring dessert. I’ve been watching my “girlish figure” lately, so I wanted to prepare something that was equally as healthy as it was delicious (not sure this qualifies, but it was worth a shot). I instantly thought of my Bubbie’s Oatmeal Chocolate Chip Cake that we eat during the Holiday season. There’s something about the oatmeal that makes the cake super moist and the chocolate chips make it deliciously melty. And let me tell you, it was a huge hit.
Bubbie’s Oatmeal Chocolate Chip Cake 1 3/4 cups boiling water 1 cup uncooked oatmeal 1 cup brown sugar 1 cup granulated sugar 1/2 cup margarine 1 3/4 cup flour 1 tsp. baking soda 1/2 tsp. salt 2 Tbsp. cocoa powder 1 12 oz. pack semi-sweet chocolate chips 3/4 cup chopped walnuts (optional)

1. Pour boiling water over oatmeal
2. Let stand 10 minutes
3. Add brown sugar, white sugar and margarine
4. Stir until margarine is melted
5. Add eggs
6. Mix well
7. Sift dry ingredients together and add to oatmeal mixture
8. Add 1/2 bag of chocolate chips and blend in

9. Pour batter into greased and floured 9x13x2 pan
10 . Add the rest of chocolate chips to top

11. Bake at 350 degrees for 45-50 minutes
12. Check if done with toothpick
